I'm sure you'll love them. Before you spring for the 3-iron, make sure and check comparable distance hybrids. It sounds like you're in general targeting clubs that are easier to hit, and hybrids are more forgiving than even H5 irons. There are still some good reasons the 3-iron might be a good choice - more penetrating ball flight for windy conditions and greater workabilty being maybe the biggest - but if you're going for easy to hit a hybrid might suit you better at that club length.

I have the H4 3 iron. Is there a significant improvement for me to jump up to H5?

As H5 3 iron is a cast head. I play 2 deg upright. Are the heads cast in multiple lies to accommodate this?
Cheers

AFAIK Mizuno make heads from 2° flat to 2° upright in all their irons. Anything else needs bending. To answer your other question...well I can't as I've never hit the H4 but I can hit the 2i no problem so I reckon any halfway decent player will thrive with them.

To the best of my knowledge, they did not make massive changes in stepping from the H4 to H5 and its a small generational evolution, not a fundamental change. I doubt you would feel much difference. Personally, I'd only pay to move to an H5 from an H4 if I was simultaneously trying to change shafts to something more suited to my swing than my H4 shaft. That said, I'm cheap and it might be worth the cost to you if it helps rekindle a love affair with the clubs in your bag.
